Under the slogan “More than Japanese food” Hikaru Restaurant has brought to Panama City a concept of traditional Japanese cuisine with authentic products and classic recipes that will take you to a pleasant journey through this millenary Asian cuisine. The Executive Chef and partner Hikaru Takami, has spent the last 8 years exploring the culinary arts, starting with the French cuisine in his native Japan and now in Panama, with the challenge of enhancing the traditional Japanese gastronomy that is nestled within his cultural baggage.
Hikaru wants to show the real Japanese culture and that’s why every detail has been taken into consideration so that the client will feel immersed in this gastronomic experience that dares you to try new flavors and essences. Therefore, everything from the first contact reflects the typical courtesy and respect of the Asian culture. In fact, the staff is dressed in Yukata, a traditional Japanese dress, and through an exceptional service they will make you feel as if you were in Japan.
The menu has been designed by Chef Hikaru and highlights the culinary traditions of 4 different Japanese cities: Tokyo, Osaka, Yamaguchi and Fukuoka, with typical dishes that enhance the gastronomic heritage of the whole country. The menu itself presents a bit of everything, from Otsumami, or hot and cold dishes to share like the traditional Gyosas stuffed with pork and vegetables which are famous for the unique presentation with a crispy layer, and the Kanikama salad with crab.
Hikaru is well-known for the exquisite ramen and the freshest sushi prepared every day with the best quality products, many of them imported directly from Japan to preserve the authentic flavors. Both the Miso and Tonkotsu Ramen prepared with pork, are a unique dish known for the explosion of flavors in contact with the palate and the perfect combination of different ingredients as a result of their 8 hour cooking process. In addition, the sushi and sashimi of Hikaru are flagship dishes for the variety of fresh fish, including: tuna, salmon, white fish, cobia, shrimp, etc.
To improve the western concept of Japanese cuisine, Hikaru presents traditional dishes such as the homemade Japanese Curry with white rice, as well as the authentic Don Katsu, a rice bowl with breaded pork, egg, onions and dashi. The dessert will be a delicious Tamago or baked egg with soy that is traditionally eaten by Japanese as a sweet treat or to refresh the palate.
Hikaru’s menu offers different options for all tastes that can be paired with whiskey and Japanese sake, along with a great variety of green tea infusions. In fact, Hikaru offers the most complete selection of Japanese whiskey in the city, with 6 recognized and hard-to-find brands, such as Hibiki and The Yamazaki malt whiskey.
